This Recipe makes 9 inch (23 cm) Walnut Cake.
Serve 10 – 12 / Cook Time: 30 Minutes
Ingredients:
1 Cup (100 Grams) Chopped Walnut
2/3 Cup (100 Grams) All Purpose Flour (10+1/2 Tbsp or 1/3+1/3 Cup)
1/2 Tsp Baking Powder
1/2 Tsp Cinnamon Powder
3 Large Eggs (Room Temperature)
1 Cup (200 Grams) Packed Light Brown Sugar
1/2 Cup (125 ml) Plain Full Fat Yogurt

Complete Recipe (Step by Step)
- Preheat oven to 350°F/180°C. Lightly grease a 9 inch (23 cm) round cake pan. Line the bottom of the pan with parchment paper and lightly dust the sides of the pan with flour, topping out any excess.
- Using a chopper or food processor, pulse the walnuts with flour, baking powder, cinnamon until the nuts are finely grind. Set aside.
- Note: To keep the walnut turning into paste, add flour with it and pulse or chop walnuts by hand.
- Whip eggs, brown sugar or white sugar on high speed until tripled it volume and pale in color for 3 minutes. Whisk in the yogurt by hand and than whisk in the nuts mixture until fully incorporated. Pour the batter into prepared pan.
- Bake the cake for about 30 minutes until a tester inserted in the center of the cake comes our clean. Cool the cake in its pan because its super soft.
- Tip the cake over the plate, peel away the butter paper and place on a serving plate. Dust the top of the cake with icing sugar. Serve each slice of cake with a fruit preserves.

135 Grams Brown Sugar
45 ml Milk
75 Grams Butter
200 Grams Powdered Sugar (More or less depending on the texture)
- In a sauce pan, bring the butter, milk and brown sugar to a boil.
- Immediately take off the heat.
- Let it cool down completely.
- Transfer in a bowl.
- Using a hand mixer, mix while gradually adding the powdered sugar.
- Add until the texture is right and still peaks forms.
