Ingredients:

4 medium Potatoes
2 Tsp Coriander Powder
1/2 Tsp Salt
1 Tsp Red Chili Powder
1 Tsp Cumin Powder
1 Tsp Chili Flakes
2 Tbsp Chopped Green Chilies
1/4 Cup Coriander Leaves

Ingredients for Coating:

2 Eggs
1/4 Tsp Salt
1/4 Tsp Chili Flakes
1/4 Black Pepper (Optional)
Bread Crumbs (As much required)

For Garnishing:

Coriander Leaves
Black Pepper Powder
Salt

Complete Recipe (Step by Step)

  • Boil 4 small potatoes, which should be around 300 – 400 grams.
  • Mash them when boiled. Add 2 or 3 green chilies finely chopped. Add 1/4 cup fresh coriander leaves, 1/2 tsp salt or to taste, 1 tsp red chili powder, 1 tsp cumin powder, 2 tsp coriander powder, 1/2 tsp or 1 tsp chili flakes. Knead all the ingredients with hand.
  • After mixing test to see that whether it hold shape. If not, than knead again with hands for few more seconds.
  • For coating, beat 2 eggs, 1/4 tsp salt, 1/4 tsp chili flakes and set aside.
  • Boil 4 eggs.
  • Take a handful of potato mixture in a palm. Make a hole and place egg in the hold and cover it with the rest of the potato mixture and make round ball.
  • If egg is not fully covered, than some more potato mixture and cover it properly.
  • You can refrigerate it for 15 minutes or you can fry immediately.
  • Coat the ball in egg wash, which was prepared before. Cover all the sides with egg.
  • Then roll it over in bread crumbs and make sure to cover it completely.
  • Heat oil in deep wok. Place a stick in oil and if bubbles appear around it, than start frying the potato scotch egg balls on medium flame. Fry it golden brown.
  • Remove when golden in colour and serve by slicing it in half.
  • Sprinkle coriander leaves, salt and black pepper and enjoy it with your choice of sauce.
