Ingredients For Tikka:
750 Grams Chicken Boneless Thigh
1/4 Cup Thick Yogurt
2 Tbsp Fresh Cream
3 Tbsp Chili Paste
1 Tbsp Oil
1/2 Tbsp Lemon Juice
1 Tsp Black Pepper Powder (Freshly Crushed)
1 Tsp White Pepper Powder
1/2 Tsp Salt or to Taste
1/2 Tsp Garam Masala Powder
1/2 Tsp Cardamom Powder
1 Tbsp Ginger Garlic Paste
2 Tbsp Oil for Grilling
Ingredients For Onion Paste:
1/4 Cup Oil
2 Medium Sized Onions (Sliced)
4 Green Chilies
1/4 Cup Water for Grinding
Ingredients For Malai Handi Gravy:
1/4 Cup Oil
1 Tbsp Ginger Garlic Paste
Onion Paste Whole
1/2 Cup Whisked Yogurt
1 Tsp Black Pepper Powder
1/2 Tsp White Pepper Powder
1 Tsp Cumin Powder
1/2 Tsp Salt or to Taste
1/2 Cup Water
1/4 Cup Fresh Cream
1/2 Tsp Garam Masala Powder
2-3 Tbsp Fresh Coriander Leaves (Chopped)
Complete Recipe (Step by Step)
- Take a bowl and add 1/4 cup thick yogurt. Add 2 Tbsp fresh cream, 3 Tbsp green chilies paste, 1 Tbsp oil, 1 Tbsp lemon juice,1 Tbsp ginger garlic paste. Mix all ingredients together.
- For spices, add 1/2 Tsp salt, 1 Tsp crushed black pepper, 1 Tsp white pepper, 1/2 Tsp garam masala, 1/2 Tsp cardamon powder. All all the spices in the yogurt mixture.
- Take 700-750 grams boneless large thigh pieces and all in the yogurt mixture and coat all the chicken pieces well. Marinate for 1 hour minimum and 4 hours maximum.
- Heat 1/4 cup oil in a pan for grilling the marinated pieces. Grill the thigh pieces on medium to low flame. Pour all the marination over the pieces. Grill till its golden brown in color and its water dries out.
- Turn off heat and take metal skewers and assemble chicken pieces on it. Cook on direct flame for smoky flavour.
- Heat 1/4 cup oil in a pan. Add 2 medium onions sliced, 4 green chilies sliced. Saute till onions are soft. Add in chopper with 1/4 cup water and grind the onions in a fine paste.
- Heat 1/4 cup oil in pan. Add 1 Tbsp ginger garlic paste. Fry for few seconds then all prepared onion paste and cook on medium flame till it changes its color to pink and its water dries out. Add 1/2 cup thick yogurt and cook for few seconds.
- After cooking yogurt for few seconds. Add 1/2 Tsp white pepper, 1 Tsp black pepper (freshly crushed) 1 Tsp cumin powder, 1/2 Tsp salt or to taste. Cook for 1 minute than add 1/4 cup cream. Mix till its well blended with the onion mixture. Then add 1/2 Tsp garam masala powder and 1/2 cup water. Cook for a while till oil separates and gravy is formed.
- Add chicken tikka in the gravy and cook for a while. Also add cooked tikka marination, it left any. Cook for 2 minutes. Chicken malai tikka handi is ready.
- Add fresh coriander leaves and serve with Roghni or Sada Naan.
