Ingredients:

600-650 Grams Chicken Boneless Thighs
1 Egg
1+1/4 Tsp Salt
1/2 Tsp White Pepper
1/2 Cup Corn Starch
1 Cup All Purpose Flour (Maida)
1+1/2 Tbsp Oil
Room Temperature Water as much required

Ingredients: (For Orange Sauce)

2 Tbsp Oil or Sesame Oil
1 Tsp Garlic Paste
1/4 Tsp Ginger Paste
1/2 Tsp Chili Flakes
1/4 Cup Brown Sugar
1/4 Cup Sugar
2/4 Cup Orange Juice (1/4 Cup more if needed)
1/4 Cup Vinegar or Rice Vinegar
6 Tbsp Soy Sauce
2 Tbsp Water
3 Tbsp Corn Flour
1/4 Tsp Sesame Seeds
Orange Zest

Sesame Seeds & Spring Onions (For Garnishing)

Complete Recipe (Step by Step)

  • Place 600 – 650 grams chicken boneless thighs cut in cubes in a bowl.
  • Add 1 egg, 1+1/4 tsp salt, 1/2 tsp white pepper. Mix all ingredients with chicken.
  • In a separate bowl, add 1/2 cup corn flour, 1 cup all purpose flour, 1+1/2 tbsp oil, 1/2 cup water (room temperature) and mix all these with a whisk. If the consistency is too think, keep adding water slowly to get medium think and this should be in runny consistency.
  • Pour flour batter over chicken and coat well.
  • Cover and let it marinate for 30 minutes in refrigerator. Let it chill for 30 minutes minimum before frying.
  • After 30 minutes, fry chilled chicken and fry till golden in color.

Preparation of Orange Sauce:

  • In a wok, add 2 tbsp hot oil in which chicken was fried or use 2 tbsp sesame oil. Fry 1 tsp garlic paste, 1/4 tsp ginger paste for 10 seconds. Add 1/2 tsp chili flakes and fry for few more seconds.
  • Lower the flame to low and add 1/4 cup brown sugar, 1/4 cup sugar, 3/4 cup orange juice, you can add orange zest for strong orange flavor (Optional), 1/4 cup vinegar or rice vinegar, 6 tbsp soy sauce.
  • Cook on medium flame till sugar melts.
  • To make slurry, add 2 tbsp water and 3 tbsp corn flour. Mix and pour in the orange sauce to make it thick. Cook on low flame till its maple syrup consistency.
  • Sprinkle sesame seeds to give nutty flavor.
  • Add 1/4 cup more orange juice to get strong flavor (Optional)
  • Add fried chicken. Coat chicken with orange sauce on medium flame.
  • Cook chicken for few seconds and serve warm and sprinkle some sesame seeds and spring onions for garnishing.
