Ingredients: (Chicken Marination)
1000 Grams Chicken Boneless Breast / Thighs
2 Tbsp Yogurt
1/4 Cup Olive Oil
2 Tbsp Lemon Juice
2 Tbsp Vinegar
1 Tbsp Minced Garlic Paste
1 Tsp Cumin Powder
1 Tsp Coriander Powder
1 Tsp Paprika Powder
1 Tsp Salt
1 Tsp Onion Powder
1 Tsp Garlic Powder
1/2 Tsp Ginger Powder
1/2 Tsp Turmeric
1/2 Tsp Black Pepper
1/2 Tsp Chili Powder
1/4 Tsp Cinnamon Powder
1/4 Tsp Cardamom Powder
1/4 Tsp Cloves Powder
Ingredients: (Quick Garlic Sauce)
1/3 Cup Thick Yogurt
1/4 Cup Garlic Mayo + 2 Tbsp Plain Mayonnaise
3 Tsp Lemon Juice
1/4 Tsp Salt
(if Garlic Mayo is not available, than add 1/3 Cup Plain Mayonnaise and 2 Cloves of Crushed Garlic)
Complete Recipe (Step by Step)
- Flatten 1000 grams chicken breast / thighs with tenderizer (Note: Flatten Thin)
- In a bowl, add 1/4 cup olive oil, 2 tbsp vinegar, 2 tbsp lemon juice, 2 tbsp yogurt. Mix all the ingredients.
- When oil is mixed well with the ingredients, add 1 tbsp garlic paste, 1 tsp salt, 1 tsp cumin powder, 1 tsp coriander powder, 1 tsp garlic powder, 1 tsp paprika powder, 1 tsp onion powder, 1 tsp garlic powder and mix all these ingredients.
- Now add 1/2 tsp red chili powder, 1/2 tsp turmeric, 1/2 tsp ginger powder, 1/2 tsp black pepper, 1/4 tsp cinnamon powder, 1/4 tsp cloves powder (Take some cloves and grind into powder) 1/4 tsp cardamom powder and mix all the ingredients well.
- Place the thin chicken fillet in the prepared marination. Coat all the fillet well with the marination. Make sure each piece is coated well.
- Refrigerate for 2 hours minimum and 4 hours maximum.
(Note: Don’t cook immediately because all the goodness of spices will not infuse into the chicken and chicken will not be flavourful. Marination for at least 2 hours is must) - For quick garlic sauce. Mix 1/2 cup thick creamy yogurt with 1/3 cup garlic mayo plus 2 tbsp plain mayo (Or add 1/3 cup of plain mayo with two cloves of crushed garlic). Add 1 tbsp lemon juice, 1/4 tsp salt or to taste. Taste the sauce if it needs more lemon juice than add 2 tsp lemon juice not more than that. Adjust the ingredients quantity according to taste. Refrigerate it until serving.
- Drizzle some olive oil or any vegetable oil on hot plate or grill pan.
- Grill the marinated chicken until its fully cooked.
- When chicken is fully cooked and golden brown in color, remove from the pan and place on a cutting board and slice the chicken fillet into small pieces.
- Take a pita bread, apply garlic sauce on it.
- Add sliced onions, some pickles, sliced chicken fillet and potato fried. You can add parsley and hot sauce for extra flavor.
- Roll up and serve with garlic sauce and enjoy homemade Arabic chicken shawarma with your loved ones.
