Ingredients: (Chicken Marination)
1000 Grams Chicken
1 Tbsp Ginger Garlic Paste
1 Tbsp Crushed Black Pepper
1 Lemon Juice
1 Tsp Salt (Or To Taste)
Ingredients: (Sriracha – Mayo)
1 Cup Mayo
3 Tbsp Sriracha Sauce
4 Tbsp Tomato Ketchup
Ingredients: (Pita Bread Dough)
130 ml Warm Water
1 Tsp Sugar
7 Grams Yeast (2 Tbsp)
4 Cups All Purpose Flour (Maida)
2 Tsp Salt
3 Tbsp Oil Chopped Red Onion & Cucumber (For Salad)
Complete Recipe (Step by Step)
- In a bowl, add 800 grams chicken cubes. Add 1 Tsp salt, lemon juice, 1 Tbsp ginger garlic paste, 1 Tbsp freshly crushed black peppers. Mix all the ingredients well.
- Refrigerate the marinated chicken for 30 – 60 minutes.
- In a wok, heat 1/4 cup oil. Add the marinated chicken.
- Cook on high flame till chicken turns white.
- When chicken cubes are white then add 1/4 cup water and let it simmer on low flame covered until its fully cooked and tender.
- After 10 minutes, uncover and cook on high flame till its water dries out.
- When water dries out, keep aside and let it cool completely.
- Meanwhile prepare Sriracha – Mayo sauce.
- In a bowl, add 1 cup Mayonnaise, 2 or 3 Tbsp Sriracha sauce, depending upon your taste buds and 4 Tbsp Ketchup. Mix all the ingredients till well combined. Sriracha-Mayo sauce is ready.
- In a separate bowl, add cooled down chicken.
- Add 5 or 6 Tbsp Sriracha-Mayo sauce in the chicken and coat every bite well. Chicken is ready to assemble.
- For Preparation Pita Dough. Add 130 ml warm water in a large bowl, than add 1 Tsp sugar, 2 Tbsp instant yeast mix together.
- Add 4 cups sifted all purpose flour in the warm water. Also add 2 Tbsp salt. Mix the flour with the water, sugar and yeast. When flour is roughly in dough form, add 4 Tbsp oil. Start mixing the dough with the spatula.
- Transfer the bowl to stand mixer and knead the dough till its smooth and soft.
- If dough is too wet, than add 2 Tbsp flour and knead it again.
- Knead on high speed for 10 minutes.
- After 10 minutes, transfer the dough in the greased bowl. Cover and let it rise for 2 hours or doubled in size. Keep dough in warm place.
- When dough has doubled in size. Punch down to deflate.
- Sprinkle some flour on the kitchen top and transfer the dough from the bowl on the kitchen top and start kneading with hands for 5 minutes.
- Roll out the dough 3 cm, not too thin and not too thick. Make holes over the dough with a fork.
- Dust a separate tray with flour to keep all the pita circles.
- Cut circles with a bowl or cookie cutter.
- After cutting in circles, roll out the remaining dough again and cut more pita circles.
- Cover all pita circles and let it sit for 5 – 10 minutes.
- After 10 minutes, heat hot plate or any non stick fry pan. Grease the pan with 1 Tbsp oil.
- Place all the pita circles and let it cook from one side. When bubbles starts to form, flip over and cook the other side for few minutes and remove.
- Keep pita bites covered to keep it warm and soft.
- Make mini pita bites by assembling ingredients. Fold mini pita bites from the center and fill it with chicken mixture.
- Cut cucumber, onions into small cubes. It is optional and upon your own choice.
- Fill mini pita bites with chicken, cucumbers, onions. Enjoy every bite of mini pita bites and thumbs up.
