The Secret to Perfect Homemade McArabia Recipe

Ingredients: (Tortilla Dough)

4 Cup All Purpose Flour
1 Tsp Salt
11 Gram Yeast
4 Tbsp Milk Powder
2 Tsp Sugar
2 Tsp Kalonji (Nigella Seeds)
4 Tbsp Oil
Warm Water (As Required)

Ingredients: (Patty Recipe)

500 Grams Boneless Chicken
1 Tsp Garlic Paste
1 Tsp Chicken Powder
1 Tsp Salt
1 Tsp Black Pepper
1 Tsp White Pepper
1 Tsp Dry Basel Leaves
2 Slice Of Bread
½ Cup Milk

Vegetables:

Iceberg
Onion Rings
Tomatoes
Mayo Garlic Sauce

Complete Recipe (Step by Step)

  • First make dough for the tortilla. Add 4 cup all purpose flour in a bowl. Add 1 tsp salt, 2 tsp sugar, 4 tbsp milk powder. Add 1 packet instant yeast that is around 11 grams, 2 tsp kalonji (Nigella Seeds – The most important ingredient of the tortilla)
  • Mix all the ingredients in the flour. Add 4 tbsp oil. Add 1 cup warm water in the flour and mix with hand or spoon. Add water as much required. Knead the dough by hand or with stand mixer.
  • After a while check if the dough is stretchy enough. If it’s not stretchy than give a splash of water and knead again till the dough is stretchy and the dough sticks with the hook. Start with medium speed for 5 minutes and than increase speed to maximum. When dough sticks to the hook, turn off the stand mixer. Add 1 tbsp oil and knead again with hands.
  • After kneading by hand for few minutes the dough is very stretchy and soft.
  • Cover and let it proof for 2 hours minimum or till doubled in size.
  • For chicken Patti. Add 500 grams chicken breast or thigh boneless in a chopper. Add 1 tsp garlic paste. Chop chicken with garlic paste first. Than add the spices which are 1 tsp salt, 1 tsp black pepper powder, 1 tsp dry basil leaves. (Dry basil leaves are important ingredient. Don’t miss this if you are looking for exact flavour of McArabia). Add 2 tsp white pepper powder, 1 tsp chicken powder.
  • Soak 2 slices of bread in milk. Squeeze bread softly and add in the chicken. Milk bread slice makes patty extra soft.
  • Chop the chicken gain with all the ingredients.
  • After chopping, place the minced chicken in a bowl. Refrigerate it for 30 minutes minimum.
  • Meanwhile lets make the tortilla when the dough has risen, punch down the dough to release all the air.
  • Knead the dough for few seconds on the kitchen top.
  • Make small balls, cover and let it rest for 15 minutes.
  • After 15 minutes, roll into small and 1/2 cm thick tortilla. Don’t roll too thin.
  • Place on a hot plate and cook on low flame.
  • When bubbles start appearing, make holes with fork on tortilla.
  • When golden marks starts appearing, flip and cook the other side.
  • Keep side in hot pot to keep it soft and warm. Cook all the tortilla and keep it warm.
  • Let’s make chicken patty. Grease grill pan.
  • Apply oil on hands and make thin patty and grill it. Grill till its fully cooked. Grill all the patties and keep it in hot pot and keep it warm.
  • Let’s assemble. Place tortilla on a plate. Apply garlic mayo on the tortilla. Place tomatoes, onion rings, ice burg (it is must) and patty on one side of the tortilla and fold the other side over the patty.
  • Repeat the steps with all the tortilla and serve warm with a choice of cold drink or juice.
