Ingredients: (Marination)

700-800 Grams Boneless Chicken
1/2 Tsp Salt
1&1/2 Tbsp Vinegar
1&1/2 Tbsp Lemon Juice
1&1/2 Tbsp Ginger Garlic Paste
1 Tsp White Pepper
1/2 Tsp Black Pepper (Or To Taste)
1 Tbsp Coriander Powder
1 Tsp Cumin Powder
1 Tbsp Green Chili (Or To Taste)
2 Tbsp Thick Yogurt
2 Tbsp Cream

Ingredients: (Mayo Chili Sauce)

1/2 Cup Yogurt
2 Tbsp Mayonnaise
1 Tbsp Sriracha Sauce / Chili Sauce
1 Tbsp Chili Garlic Tomato Ketchup / Simple Tomato Ketchup
1/4 Tsp Salt

Ingredients: (Paratha Roll Chutney Recipe)

1 Cup Coriander Leaves
1/2 Cup Mint Leaves
1/3 Tsp Salt (Or To Taste)
1/4 Tsp Cumin Powder
2 Tbsp Brown Sugar (Or To Taste)
1/3 Cup Tamarind Pulp
1&1/2 Tbsp Tamarind Chutney (Optional)
2 Green Chilies
2 – 4 Tbsp Water
(Blend Paratha Roll Chutney Ingredients)
2 Medium Sized Thinly Sliced Onions

Ingredients: (Preparing Paratha)

2&1/2 Cup All Purpose Flour (Maida)
1&1/2 Cup Wheat Flour
1 Tsp Salt

Complete Recipe (Step by Step)

  1. Firstly make Mayo Hot Sauce. Take a bowl and add 1/2 cup thick yogurt, 3 Tbsp mayonnaise, 1 Tbsp sriracha sauce or chili sauce, 1/4 Tsp salt and 1 Tbsp ketchup or chili garlic sauce. Mix all the ingredients and keep aside.
  2. Secondly make green chutney sauce. Add 1 cup coriander leaves, 1/2 cup mint leaves, 2 green chilies in a chopper. Add 1/3 cup tamarind pulp, 1/4 Tsp cumin powder, 1/3 Tsp salt or to taste. Also add 2 Tbsp brown sugar or white sugar. Add 2 Tbsp tamarind chutney (Optional). 2 or 4 Tbsp of water and grind all the ingredients together to a fine paste. Green chutney is ready and keep aside.
  3. This green chutney can be served with all kind of grilled and BBQ dishes.
  4. For Chicken Marination. Add 700 – 800 grams of boneless chicken in a bowl. Add 1&1/2 Tsp salt, 1&1/2 Tbsp ginger garlic paste, 1&1/2 Tbsp vinegar, 1&1/2 Tbsp lemon juice. Mix ingredients with the chicken. These ingredients work as tenderizer.
  5. Cover and let it rest for 30 – 60 minutes.
  6. After 30 minutes, add rest of the ingredients. Add 1 Tbsp green chili paste or to taste, 1 Tsp white pepper, 1/2 Tsp black pepper or to taste, 1 Tbsp coriander powder, 1 Tsp cumin powder and mix well.
  7. When all the spices are mixed thoroughly then add 2 Tbsp thick yogurt and 2 Tbsp cream. Coat each piece of chicken with yogurt and cream.
  8. Cover and marinate for 4 hours minimum or overnight.
  9. Grill the chicken pieces on skewers or cook in a wok.
  10. In a wok, add 4 Tbsp oil and than add marinated chicken and cook till its water dries out.
  11. Fry till golden in color.
  12. Chicken Malai Boti is ready.
  13. Prepare Paratha Dough. In a large bowl, add 2&1/2 cup all purpose flour and 1&1/2 cup wheat flour. Mix both flours together. Add 1 Tsp salt. Mix and start kneading the dough in a stand mixer or by hand.
  14. In a stand mixer, add the flour mixture and knead on low speed. Keep adding water till all the flour starts coming together.
  15. Dough is done when it sticks to the hook of the stand mixer. Knead the dough soft.
  16. Once the dough sticks to the hook. Take out in the bowl and make paratha balls by adding ghee (clarified butter) in it.
  17. Freeze for 15 minutes. (Not more than 15 minutes and less than 15 minutes). This step makes parathas crispy.
  18. After 15 minutes, roll out the paratha.
  19. Grease pan with ghee (clarified butter) or oil. Slowly place dough and start cooking.
  20. App 1 Tbsp ghee (clarified butter) on one side of the paratha. Cook till it gets brown marks on both sides.
  21. For assembling paratha roll. First apply mayo chili sauce as much as needed or to taste and than put some thinly sliced onions. Onions are must for paratha rolls.
  22. Place some malai boti over onions. Pour paratha rolls special green chutney. Make it roll and Enjoy.
